Lentil Soup with Parmesan and Smoked Sausage

A hearty lentil soup with the smoky flavor of sausage and the richness of Parmesan cheese.

Ingredients:

  • 1 cup lentils

  • 4 cups chicken broth

  • 1 onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1 smoked sausage, sliced

  • 1/2 cup grated Parmesan cheese

  • 2 tablespoons olive oil

Instructions:

In a large pot, heat olive oil over medium heat


Add onion, carrots, celery, and garlic


Cook until vegetables are softened, about 5 minutes


Stir in lentils, chicken broth, thyme, paprika, salt, and pepper


Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender


Add smoked sausage slices and cook for an additional 5 minutes


Serve hot, garnished with grated Parmesan cheese

Roasted Citrus Olive-Freekeh Salad

There are nuts in this roasted citrus olive-freekeh salad, as well as sweet and sour citrus, briny olives, and fresh herbs. This salad is both refreshing and filling because it has just the right mix of tastes and textures.

Ingredients:

  • 1 cup freekeh

  • 2 cups water

  • 2 oranges, segmented

  • 1 grapefruit, segmented

  • 1 red onion, thinly sliced

  • 1/2 cup kalamata olives, pitted

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh mint leaves, chopped

  • 1/4 cup toasted almonds, chopped

  • 2 tbsp extra-virgin olive oil

  • 2 tbsp lemon juice

  • Salt and pepper to taste

Instructions:

Run cold water over the freekeh and let it drain


Put the freekeh and 2 cups of water in a saucepan


Once it starts to boil, lower the heat, cover, and let it cook for 20 to 25 minutes, or until the freekeh is soft and the water is gone


Take it off the heat and let it cool down


Cook the freekeh and put it in a large bowl


Add the orange and grapefruit segments, red onion slices, kalamata olives, chopped parsley and mint leaves, and toasted almonds


The extra-virgin olive oil and lemon juice should be mixed together in a small bowl using a whisk


Add pepper and salt to taste


Add the dressing to the salad and gently toss to mix everything together


You can serve the roasted citrus olive-freekeh salad right away or put it in the fridge to eat later


It tastes great either way!

Pour a small amount of batter into the hot skillet, swirling it around to coat the bottom evenly


Cook for about 1-2 minutes or until the edges start to lift and the crepe is lightly golden


Carefully flip the crepe using a spatula and cook for another 1-2 minutes on the other side until it's cooked through and lightly browned


Remove the cooked crepe from the skillet and repeat the process with the remaining batter, adding fillings of your choice as desired


Fold or roll the crepes, serve hot, and enjoy!

Healthy Chocolate Smoothie

This tasty vegan chocolate smoothie is a treat you can enjoy without feeling bad about it. Thanks to the healthy fats in the bananas, almond butter, and chia seeds, this is a great way to satisfy your chocolate cravings.

A tasty change from regular pancakes are these Mini Sausage Pancake Muffins. They're great for breakfast or brunch and also make a tasty and easy snack. You'll love the way the fluffy pancakes, savory sausages, and melted cheese taste together.

Ingredients:

  • 1 cup pancake mix

  • 1/2 cup milk

  • 1 egg

  • 8 mini sausages

  • 1/2 cup shredded cheddar cheese

  • Maple syrup for dipping

Instructions:

Preheat your oven to 350F 175C and grease a mini muffin tin


In a mixing bowl, combine the pancake mix, milk, and egg


Mix until smooth


Cut the mini sausages into small pieces and stir them into the pancake batter


Pour the batter into the greased mini muffin tin, filling each cup about 2/3 full


Sprinkle shredded cheddar cheese on top of each muffin cup

  • 1 cup gluten-free beer

  • 1 egg

  • Vegetable oil for frying

Instructions:

Mix in the gluten-free beer and egg, then use a whisk to make a smooth batter


In a deep fryer or large pot, heat the vegetable oil to 350F 175C


Let the extra beer batter drip off of each halibut strip as you dip it in it


Watch out as you put the battered halibut strips into the hot oil


Fry for three to four minutes on each side, or until they are golden brown and crispy


Put the fried halibut strips on a paper towel-lined plate to drain any extra oil after taking them out of the oil with a slotted spoon


Halibut that has been battered in gluten-free beer should be served hot with your choice of dipping sauce or tartar sauce

Instructions:

Melt the unsalted butter and one cup of creamy peanut butter in a large mixing bowl until smooth

Using a 9 x 13 inch 23 x 33 cm baking pan, press the mixture into the bottom to form an even layer
